The standout dish is paan chicken, developed through multiple trials and drawn from Shukla's family tradition of rose-flavoured paan powder. The menu also features pork doughnuts and tomato tarte tatin. Bare Bombay operates as a collaborative kitchen, rotating guest chefs into residencies every few months, a format that sits beyond the standard pop-up or one-night takeover.
