San Francisco's Californios became the first Mexican restaurant in the world to earn Three MICHELIN Stars, announced at the 2026 MICHELIN Guide California ceremony on June 26, 2026.

Californios was joined at the top tier by Enclos in Sonoma, also newly promoted to three stars. The Bay Area dominated the evening, while Los Angeles's Kato climbed to Two MICHELIN Stars. Nine additional restaurants across the state earned their first star.

Yeh toh bada hai. Mexican cuisine has long anchored California's food identity. Californios getting three stars is a formal reckoning with that reality on the world stage.
